Idli Sambar is a classic South Indian dish, perfect for a hearty breakfast or meal. Here’s a simple recipe to make soft idlis and flavorful sambar:
Ingredients
For Idli
2 cups idli rice
1 cup urad dal (black gram)
1 teaspoon fenugreek seeds
Salt to taste
Water as needed
For Sambar
¾ cup toor dal (pigeon peas)
2 cups water
2 tablespoons tamarind pulp
1 large tomato, chopped
1 medium carrot, chopped
½ cup pumpkin, diced
1 teaspoon turmeric powder
½ teaspoon red chili powder
1 teaspoon sambar powder
2 tablespoons coriander leaves, chopped
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida (hing)
2 dried red chilies
2 sprigs curry leaves
1 tablespoon oil
Instructions
For Idli
Wash and soak idli rice, urad dal, and fenugreek seeds for 6 hours.
Grind them into a smooth batter, adding water as needed.
Ferment the batter overnight.
Grease idli molds, pour batter, and steam for 10-15 minutes.
Serve hot with sambar.
For Sambar
Cook toor dal with water until soft. Mash and set aside.
Soak tamarind in warm water, extract pulp, and set aside.
Heat oil in a pan, add mustard seeds, cumin, red chilies, curry leaves, and asafoetida.
Add chopped vegetables and saut├й for 2 minutes.
Add turmeric, red chili powder, and sambar powder. Mix well.
Pour water and cook until vegetables are soft.
Add tamarind pulp and mashed dal. Stir and bring to a boil.
Garnish with coriander leaves and serve hot with idlis.
