Namaskar,welcome to healthy kitchen nawazi...In this session we will learn how to make Restaurants style dry mix veg sabzi recipe. Dry mix veg sabzi is an all time favorite. You can find this dish easily in the menu of almost all Indian restaurants.

So let's start to make delicious dry mix veg sabzi in restaurants style.

Ingredients for delicious dry mix veg sabzi
  
Chopped potatoes - 3 medium size
Some chopped cauliflower
  
Some chopped french beans

Chopped capsicum - 2
250 grams paneer ( Indian cottage cheese) - chopped in cubes

Roghly chopped tomato - 1 large size

Roghly chopped onions - 3 medium size

Mustard oil ( you can use any cooking oil )

A pinch of asafoetida

1/2 tsp  cumin seeds

1 inch of  ginger roghly chopped

5 -7 cloves of garlic

2-3 green chilly 

1 tsp of cumin powder

1 tsp coriander powder

1/3 tsp red chilli powder ( you can increase or decrease as per your taste)

1/2 tsp turmeric powder

salt as per taste

1/2 tsp garam masala powder

Some fresh coriander leaves - chopped

Method to prepare for  dry mix veg sabzi

For the gravy mixture

Firstly, Pour 2 cups of water in a pan, then add chopped onion ,green chilly, ginger and garlic to it. Mix it well . and cook on a medium flame for 8 to 10 minutes, while stirring. 




Keep aside to cool completely.

Once cooled, put all the ingredients in a blender jar, make a smooth paste , keep aside.





How to proceed to make dry mix veg sabzi

Heat the oil in a kadai or wok or pan,
Let the oil heat properly.
Now fry all the vegetables one by one for 3-4 minutes or till they turn light golden brown in color. Cooking in this way will not only cook the vegetables properly, but will add a real taste. So, frying gives more taste to vegetables compared to boiling.
Fry the chopped paneer as well.




 After frying,remove all the vegetables and paneer in a plate.



Now again Heat 2 tbsp of oil in a kadai. Let the oil heat properly.
After heating the oil add asafoetida, and Add cumin seeds, when cumin starts to pop up then add the blended paste mix it well .



Then add turmeric powder.

Add Coriander powder

Add red chilly powder

Add cumin powder

Add salt as per taste

Mix all the ingredients very well and cook it on medium flame and fry it till the oil separates from the spices.




Now add 1/2 cup of water to make the gravy less thick.




Finally add fried vegetables and mix it well, then add 1/2 tsp of garam masala and mix it well again.
Cover it and cook it for 4-5 minutes on medium flame , while stirring in between. 




Garnish it with fresh coriander leaves. 

Now take it out in a serving bowl.



Serve the dry Mixed Veg Sabzi hot with rotis ,chapati or  parathas.
