Fried Sattu-Litti Recipe - Learn How To Make Fried Sattu-Litti
Namaskar, welcome to healthy kitchen nawazi...In this session we will learn how to make mouth watering fried sattu Litti.
This dish is originated in the state of Bihar famous across India and Nepal. This dish serves as acomplete meal and can be taken in lunch, dinner or as a snack itme. Litti is made in various ways and one of the most tasty ways of making litti is by frying them. Fried Sattu-Litti is commonly available as street food. Hot and crispy Fried Sattu-Litti can be relished with baingan ka bharta or chokha or any chutney. Prepare this healthy and filling dish for your friends and family
So let's start to make fried sattu litti
No. of serving - 3 (2-3 Fried Sattu-Litti per person)
Ingredients for making Fried Sattu-Litti:
Ingredients for Sattu Stuffing for making Fried Sattu-Litti:
- Sattu - 1 cup (200 grams) ; (You can use any sattu as per your taste. I have used Chane Ka Sattu here for making Fried Sattu-Litti
- Finely chopped onions - 2 medium size
- Grated ginger -1 inch piece
- 6-7 cloves of Chopped garlic,
- Green Chilli - 3-4, finely chopped
- Coriander Leaves - 1 tbsp, finely chopped
- A lemon juice
- Onion Seeds - 1/2 tea spoon
- Carom Seeds or ajwain - 1/2 tea spoon
- Salt as per your taste
- Mustard oil or - 2 table spoon
- Some mango pickle masala
- Water - 2 table spoon, only if required to moisten the Sattu stuffing mixture for making Fried Sattu-Litti
- Whole Wheat Flour - 2 cups (250 grams)
- Water - for making the dough
- Desi ghee or refined oil - as per requirement for frying the Sattu-Litti
Methods to prepare Fried Sattu-Litti:
Take whole wheat flour in a deep vessel and slowly add water to it, to knead it into a medium hard dough. The dough prepared for making Fried Sattu-Litti should neither be very hard nor very soft. Prepare the dough for making Fried Sattu-Litti and keep it aside to rest while you prepare the sattu stuffing mixture for Fried Sattu-Litti.
Now take one big late or bowl and add sattu to it.
Add finely chopped onion, ginger, garlic, green chilli ,pickle masala and coriander leaves to it.
Then add carom seeds and onion seeds to it, and mix the dry ingredients well.
Now add 2 table spoon mustard oil and salt to this sattu stuffing mixture and mix all ingredients well.
Crumble the sattu stuffing mixture nicely and check if it begins to bind. If the mixture appears dry then add 2 table spoon water to this sattu stuffing mixture and crumble again.
Remember that this sattu stuffing mixture for making Fried Sattu-Litti should neither be very dry nor very moist in texture.
Now take the whole wheat dough prepared for making Fried Sattu-Litti and knead it again to smoothen it out.
Then prepare small and equal sized balls of the dough for making Fried Sattu-Litti.
Now take one ball, smoothen it and then make a depression at its centre and give a shape of a bowl to this wheat ball.
Then place some sattu stuffing mixture into the whole wheat bowl and then bring the sides together and bind them together. Roll lightly and smoothen again to form a sattu stuffed whole wheat ball or litti.
Prepare all the litti in the same way.
Now take a wide and deep vessel and fill it water. Set the water to boil.
When the water begins boil, then add the prepared Sattu Ki Litti to it. Allow the litti to cook in the boiling water for 5 minutes.
After 5 minutes remove the boiled Sattu-Litti to a seive and allow them to dry and cool for 10 minutes. Fry these boiled sattu-litti only when all the moisture from them has dried up.
Then heat some desi ghee or refined oil in a kadhai. If possible, then prefer to use a kadhai made of iron metal to fry the Sattu Ki Litti. You can use any other kadhai as well.
When the ghee or oil is hot enough for frying then lower the flame to medium level and transfer 2-3 boiled sattu ki litti at a time to the hot oil for frying. Carefully flip and fry the sattu ki litti till they turn uniform crispy golden on all sides. Transfer the Fried Sattu-Litti To a plate and fry the remaining boiled sattu ki litti in the same way.
The hot, crispy, stuffed and Fried Sattu-Litti are ready to be served with Baingan Ka Bharta or Chokha.

फ्राइड सत्तु-लिट्टी बनाने की प्रक्रिया:
एक गहरे बर्तन में गेहूं के आटे डालें और इसमें धीरे-धीरे पानी डालकर एक मध्यम सख्त आटा गूंध कर तैयार करें। फ्राइड सत्तु की लिट्टी बनाने के लिए तैयार आटा न तो बहुत सख्त होना चाहिए और न ही बहुत नरम होना चाहिए। फ्राइड सत्तु-लिट्टी बनाने के लिए आटा गूंध कर तैयार करें और फिर इसे ढक कर अलग रख दें।
अब एक बड़ी थाली या कटोरा लें और इसमें सत्तु जोड़ें।
फिर इसमें बारीक कटा हुआ प्याज, अदरक, लहसुन, हरी मिर्च और धनिया को डालें।
उसके बाद इसमें अजवैन और मंगरैल या कलौंजी
लें, और सूखी सामग्री को अच्छी तरह मिलाएं।
अब 2 बड़ा चम्मच सरसों का तेल और नमक को डालकर, सारी सामग्री को अच्छी तरह मिलाएं।
सत्तु के मिश्रण को मुट्ठी मे दबकर देंखें की ये मिश्रण बंधना शुरू हुआ है या नहीं। यदि मिश्रण सूखा लगे तो इसमें 2 बड़ा चम्मच पानी डालकर अच्छे से मिलाएं। याद रखें कि फ्राइड सत्तु-लिट्टी बनाने के लिए यह सत्तु का भरावन न तो बहुत सूखा हो और न ही बहुत गीला हो।
अब फ्राइड सत्तु-लिट्टी बनाने के लिए गूंधा हुआ आटा लें और इसे एक बार गूंध कर चिकना कर लें।
फिर फ्राइड सत्तु-लिट्टी बनाने के लिए आटे की छोटी-छोटी और बराबर आकार की लोई तैयार करें।
अब एक लोई लें, इसे एक गेंद की तरह चिकना करें और फिर एक कटोरी का आकार दें।
फिर इसके अन्दर थोड़ा सत्तू का भरावन दबा-दबाकर भरें और फिर किनारों को एक साथ लाकर चिपका दें।
हल्के हाथ से रोल करें और एक सत्तु भरी हुई गेहूं की गेंद या लिट्टी बनाने के लिए फिर से चिकना करें। उसी तरह सभी लिट्टी तैयार करें।
अब एक गहरे पतीले में पानी भरकर उबाल लें।
जब पानी में उबाल आजाए, तो तैयार सत्तु की लिट्टी को इसमें डालें। लिट्टी को उबलते हुए पानी में 5 मिनट तक पकने दें।
5 मिनट के बाद उबली हुई सत्तु-लिट्टी पानी से निकाल लें और एक छननि या चलनि में निकाल कर रखें। लिट्टि को 10 मिनट तक अच्छे से सूखने और ठंडा होने दें। इन उबली हुई सत्तु-लिट्टी को तलने से पहले अच्छे से सुखा लें।
फिर एक कढ़ाई में थोड़ा देसी घी या रिफाइंड तेल डालकर गरम करें। यदि संभव हो तो, फ्राइड सत्तु-लिट्टी बनाने के लिए लोहे की कढ़ाई का उपयोग करें। आप किसी भी अन्य कढ़ाई का उपयोग भी कर सकते हैं।
जब घी या तेल सत्तु की लिट्टी को तलने के लिए पर्याप्त गर्म होजाए तो आँच को मध्यम स्तर तक कम कर दें और गरम तेल में 2-3 उबली हुई सत्तु-लिट्टी सावधानी से डालें। सत्तु की लिट्टी को सावधानी से पलट कर सभी पक्षों पर एकसमान खस्ता सुनहरा होने तक तलें। फ्राइड सत्तु-लिट्टी को एक प्लेट में निकाल लें और शेष उबली हुई सत्तु-लिट्टी को भी इसी तरह से तल लें।
गर्म, खस्ता, भरवां और फ्राइड सत्तु-लिट्टी को बैंगन-भरता या चोखा के साथ परोसें।
